Graham Hornigold confesses his guilty pleasure is stealing his son’s fruit pastilles when he is asleep

A PASTRY CHEF with more than 25 years of professional experience, Graham Hornigold is responsible for setting up new pastry kitchens within the rapidly expanding Hakkasan Group, most notably in Mumbai, Dubai and New York. He currently manages a team of 120 pastry chefs spread over 25 restaurants, with a strong team of 40 highly skilled chefs here in London. He oversees all dessert preparation for Sake no Hana, Hakkasan Hanway and Mayfair 1*, HKK 1* and the famed handcrafted petit-gateaux, macarons and pralines at Yauatcha 1*.

Hornigold claims he started in pastry ‘as it has more mediums for making people happy. He attended Thames Valley University in 1997 and graduated with a degree in Culinary Arts Management.  Since then, he has worked across small boutiques, retail operations, world-renowned five-star hotels and restaurants across Europe, the Middle East, Asia, China, India and the United States. 

Before joining the Hakkasan Group, Hornigold assisted with the design and re-opening of the Mandarin Oriental Hyde Park before joining The Lanesborough as Executive Pastry Chef. In his six years there, he accumulated a successful array of accolades, including ‘Pastry Chef of the Year’ at the Craft Guild of Chefs Awards and four Tea Awards by the Tea Guild. In 2008, Hornigold returned to the Mandarin Oriental to head the pastry kitchen, open Bar Boulud and assist with the instalment of Dinner by Heston Blumenthal. Starting his career at Sopwell House, St Albans, he has also graced the distinguished kitchens of the Park Lane Hotel and Lygon Arms, then part of the Savoy Group.

Hornigold is a regular panel judge for the National Chef of the Year, Craft Guild of Chefs, The Royal Academy of Culinary Arts and The UK Pastry Club coupe du monde; he has demonstrated his patisserie skills on television networks in the UK and Europe; and he has taught baking, pastry and chocolate master classes through the Barry Callebaut Chocolate Academy. 

With a modern style, influenced by French classical cuisine, Hornigold is renowned worldwide as a leading pastry chef and dessert designer.
